Those who have tried to bake bread at home know how a slight change of hand movement while working the dough transforms the final form of the loaf. A slight variation in the process may result in altered form, flavor and structure of the baked bread.

One should bake bread a hundred times not only to get all measures and data right and, more importantly to get the feeling of the dough: how it moves, falls, sounds… There are no short cuts in this process.
